Caramel Espresso Dream By Kamalesh Meshak, Bar Manager, Suka Brew and Kitchen
Ingredients
Gin – 45 ml
Coffee liqueur – 15 ml
Biscoff spread – 1 bar spoon
Hazelnut syrup – 10 ml
Fresh brewed coffee (ID Coffee) – 45 ml
Method
Add all ingredients to a shaker filled with ice. Shake vigorously until the Biscoff spread is fully emulsified and the texture turns smooth and velvety. Fine strain into a chilled martini or coupe glass.
Garnish
Biscoff crumb rim and a hazelnut cookie.
Passion Fruit Ginger Bubbler By Arbaz, Bartender, Tropika
Ingredients
Gin – 45 ml
Passion fruit purée – 30 ml
Ginger syrup – 15 ml
Fresh lime juice – 15 ml
Ginger ale – to top
Method
Add gin, passion fruit purée, ginger syrup, and lime juice to a shaker filled with ice. Shake well until chilled. Strain into a red wine glass filled with fresh ice. Top up with ginger ale and gently stir.

Ingredients
Vodka – 60 ml
Fresh lime juice – 15 ml
Homemade pomegranate syrup – 10 ml
Fresh pomegranate juice – 45 ml
Fresh ginger juice – 5 ml
Method
Add vodka, lime juice, pomegranate syrup, pomegranate juice, and ginger juice to a shaker filled with ice. Shake well until balanced and chilled. Strain into a chilled glass filled with fresh ice.
Garnish
Dehydrated orange slice, fresh mint sprig, and pomegranate seeds.

Ingredients
- 4 ml freshly brewed coffee decoction
- 1 teaspoon jaggery powder
- 30 ml aged rum
- 60 ml hot water
- 50 ml fresh cream
- 5 gms fresh vanilla extract
- Nutmeg
Method
Take a fresh decoction of coffee in a mug. Add vanilla extract, stir to mix without creating any lumps. Pour in aged rum and allow to settle. Now add hot water, leaving enough room for the cream. Separately take fresh cream and add jaggery powder. Whisk lightly till it becomes airy but still pourable. Using the back of a spoon, gently float the cream over the coffee so that it allows the airy cream to settle neatly on top. Finish it off with freshly grated nutmeg. Enjoy each sip with a bite of winter special ginger cookie.

Ingredients
- Single malt whisky – 60ml
- Smoked cinnamon stick – 1 stick
- Pomegranate juice – 30 ml
- Honey water – 15 ml
- Angostura Bitter – 2 dashes
- Pomegranate arils – for garnish
Method
Serve in a whisky glass and add 60 ml of single malt whisky, 15 ml of honey water, 30 ml of pomegranate juice and 2 dash angostura bitter. Stir gently to dissolve the honey and cinnamon powder, and garnish with a smoked cinnamon stick and pomegranate arils. Garnish with pomegranate arils and a smoked cinnamon stick.
New Year’s Bash By Grey Goose
Ingredients
- Grey Goose Vodka – 45 ml
- Elderflower Syrup – 10 ml
- Lime Juice – 10 ml
- Sparkling Rosé – Top up
- Mint – For garnish
Method
Take a chilled champagne flute. Add Grey Goose vodka, elderflower syrup and lime juice to the glass. Gently top up with sparkling rosé. Stir lightly to combine. Garnish with fresh mint and serve immediately.
