Many prefer makki ki roti with sarson ka saag in winter.

Every day, we consume wheat flour rotis as a staple food, which is highly beneficial. However, during the winter season, you can switch up your food habits. Many people prefer makki ki roti (corn flour flatbread) with sarson ka saag (mustard greens) in the winter. Makki ki roti is known to keep the body warm and also aids digestion. However, making soft and pliable makki ki rotis can be challenging for some, as they often turn out hard and difficult to eat. If you face a similar problem when making makki ki roti, here are some simple tips to ensure they turn out soft and delicious:

Easy Method to Make Soft Makki Ki Rotis:

1. Mix with wheat flour:

Corn flour (makki ka atta) is not as sticky as wheat flour, making it hard to knead and roll into rotis. To solve this, mix half a cup of wheat flour with every two cups of corn flour. Avoid adding too much wheat flour as it may overpower the corn flour’s flavour. You can also add a pinch of turmeric to give the rotis a vibrant colour.

2. Use warm water:

Always knead the dough with warm water instead of cold water. This helps bind the dough better and keeps it soft. After kneading, let the dough rest for some time before making the rotis.

3. Add ghee or oil:

While kneading, add one tablespoon of oil or ghee. This helps make the dough softer and prevents it from breaking while rolling.

4. Roll carefully:

When rolling the rotis, sprinkle some wheat flour to prevent them from sticking or breaking. Avoid making them too thin or too thick; aim for a medium thickness.

5. Cook properly:

Heat the tawa (griddle) thoroughly before placing the roti on it. Once one side is cooked, flip it. If you prefer using oil or ghee, apply it generously on both sides and cook until golden. If you want to cook without oil, you can roast the roti directly on the flame to make it soft and puffy.

6. Enjoy with sides:

Once the roti is cooked, brush it with ghee or butter. Serve hot with sarson ka saag, aloo methi, or any other winter vegetable curry for a delightful meal.

By following these tips, you can prepare perfectly soft makki ki rotis every time and enjoy them during the winter season with your favourite accompaniments.
